3 Simple Summer Lunches (Chicken Based)

Despite the fact that Summer is coming to a close in less than two weeks, the fun can still go on inside the home. Cooking can be a form of a good time, especially when it involves chicken, a common meat that can be prepared in multiple ways. Here are three simple lunches that all include chicken.

Chicken and Apple Sandwich
Ingredients:
1 can canned chicken (shredded or chunks, drained)
Mayonnaise
1 tablespoon lemon juice
1 ½ cups grated Swiss cheese
2 celery stalks (chopped)
1 apple (finely chopped)
Whole wheat bread
¼ cup softened butter
Steps:
#1: In a bowl, mix together the chicken, mayonnaise (as much is needed for creaminess), lemon juice, Swiss cheese (or any cheese or your choosing), celery, and apple slices.
#2: Place mixture between two slices of bread then spread the outsides of the sandwich with the butter.
#3: Heat a skillet over medium heat.
#4: Grill sandwich, covered, over medium heat until the cheese is melted and gooey and bread is toasted to your liking.

Shredded Chicken (Salad), with crackers
Ingredients:
1 or 2 cans of chicken (shredded or chunks)
Mayonnaise
2 cups of diced celery (optional)
¾ cup minced sweet onion (optional)
½ cup sweet relish
Crackers
Steps:
(For this recipe, cooking the chicken is optional but may be done in a skillet with butter and seasonings to your choosing.)
#1: Stir together all ingredients, adding in more if desired.
#2: Done! Enjoy with your choice of crackers: Ritz, saltines, etc.

Chicken Caesar Salad
Ingredients:
1 can of chicken breast (shredded or chunks)
1 avocado (optional)
2 boiled eggs (chopped)
Lettuce
Lemon juice
Parmesan cheese
Seasonings: Oregano, salt, pepper, mustard, garlic powder, onion powder, and chives
Steps:
#1: Cooking the chicken is optional, but if desired, begin by heating a skillet over medium heat. Place the chicken in the skillet, seasoned, and cook for 8-10 minutes. After 6-8 minutes, flip the chicken, then cook the second side until golden brown for 4-6 minutes more.
#2: While the chicken is cooking, boil the eggs for 8-12 minutes then let sit for 2-3 minutes.
#3: Chop up the lettuce into pieces and avocado into chunks. Once chicken is done, chop up into thin slices or chunks.
#4: Peel and slice eggs into slices or quarters. Place lettuce and avocado in a bowl, then add eggs and chicken.
#5: Drizzle dressing over chicken and sprinkle parmesan cheese. Top with chives, then taste and add seasonings or dressing if needed.
