Since March, we have been subjected to the horrors of staying inside during school time when we should be hanging out with friends. Due to the traumatic time that is this current pandemic, we deserve rewards to help us cope: sweet treats to be exact. Here are three summer desserts to try before summer ends.

Fudgy Cocoa Brownies

Ingredients:
½ cup unsalted butter (melted and hot)
1 tablespoon cooking oil (olive or coconut)
1 ⅛ cup superfine sugar (white granulated sugar)
2 large eggs
2 teaspoons pure vanilla extract
½ cup all purpose flour
½ cup unsweetened cocoa powder
Crushed nuts of any kind (almonds, walnuts, etc.) (optional)
¼ teaspoon salt
Steps:
#1: Preheat oven to 350°F.
#2: Lightly grease a square baking pan with cooking oil spray. Line with parchment paper.
#3: Combine hot, melted butter, oil, sugar together in a medium-sized bowl. Mix together, then add eggs and vanilla extract. Mix.
#4: Stir flour, cocoa powder, and salt together, then gently mix the dry and wet ingredients. Be careful not to over stir the mixture..
#5: Pour batter into pan. Top with chocolate chips or chosen ingredients. (Optional)
#6: Bake for 20-25 minutes or until the mixture no longer jiggles in pan. If you test with a toothpick or knife, the utensil should not come out clean for fudgy brownies.
#7: Take out pan and let it cool before slicing.

Berry Smoothie Bowl

Ingredients:
1 cup frozen mixed berries
1 small ripe banana (sliced and frozen)
2-3 tablespoon light coconut or almond milk (add more if needed)
1 scoop plain/vanilla protein powder (optional)
Toppings:
1 tbsp shredded unsweetened coconut (dried)
1 tbsp chia seeds
1 tbsp hemp seeds
Granola (optional)
Fruit (optional)
Steps:
#1:Add frozen berries and bananas to blender and blend on low until bits remain
#2: Add some coconut or almond milk and protein powder (optional). Blend on low until mixture is a soft consistency.
#3: Scoop into a bowl and top with desired toppings.

Vanilla + Chocolate Ice Cream

Vanilla: Ingredients:
¾ cup white sugar
1 cup heavy whipping cream
2 ¼ cups milk
2 tsp vanilla extract
Steps:
#1: Stir sugar, cream, and milk in a pan over low heat until sugar is dissolved. Heat up until the mix is hot and a small ring of foam develops around the edge.
#2: Transfer mixture to a pourable container such as a measuring cup. Stir in vanilla extract and chill mix for at least 45 minutes.
#3: Before completely frozen, stir eagerly. Continue to check every 30 minutes and stir. Repeat for 2 to 3 hours.
#4: When ice cream is slightly frozen, serve.

Chocolate: Ingredients:
1 ½ cups whole milk
½ cup unsweetened cocoa powder
1 cup granulated sugar
2 cups heavy cream
1 tsp vanilla extract
Steps:
#1: Mix together milk, cocoa powder, and sugar. Mix until the sugar and cocoa dissolve.
#2: In a bowl, beat the cream until it forms stiff peaks. Then stir whipped cream with vanilla extract into cocoa mixture and chill mix for at least 45 minutes.
#3: Before completely frozen, stir eagerly. Continue to check every 30 minutes and stir. Repeat for 2 to 3 hours.
#4: When ice cream is slightly frozen, serve.
