Apple Cinnamon Crepes sounds delicious right? A perfect way to indulge the fall season. Being a huge fan of crepes, I gave myself the invigorating task of making them. Hard can it be to make essentially thin pancakes filled with apples and sprinkle a bit of sugar on top? Due to past baking calamities of which I can no longer speak, I was aware that my skills might not have been up to par. While I attacked this project scrupulously, creating the batter was one conflict I encountered followed by the conflicts that ensured when it came to the size of the apple cubes (which was not specified – I have to state this to defend my culinary ego). This was not the last issue to arise. I had struggles with the time for cooking the mixture of apples, cinnamon, and brown sugar – as these were not satisfactorily stated within the instructions. Yet, the outcome of the Apple Cinnamon Crepes was a smash! Our entire newspaper staff evaluated and critiqued the crepes with feedback such as “Outstanding Recipe,” “One of the best Crepes that I’ve ever had. Perfect for Fall,” and “They were so good, I loved them!” One critique was that the crepes would not stay folded. The follow up suggestions to resolve this problem was to use a substance (cream of some kind) that would have tied the knot with an excellent dessert to start October! Nonetheless, the result of the Apple Cinnamon Crepes was a definite success that you all should partake in and enjoy!

INGREDIENTS :
3 Apples, Cored & peeled3 Tablespoons Brown Sugar
I Teaspoon Cinnamon
Homemade Crepes
Gluten Free Crepes

 

INSTRUCTIONS:
Chop apples into small cubes, place cubed apple slices in a medium sized bowl, add brown sugar and cinnamon, and toss everything together to coat chopped apples with brown sugar and cinnamon {20 minutes to settle}
Right before serving, neat chopped apples on medium heat in a skillet and warm the crepes in a microwave for about 2o seconds
To serve, add chopped apples on top of the open crepe, and fold the crepe into the pocket shape. Sprinkle powdered sugar.

~French Vanilla Cupcakes~# 2

INGREDIENTS:
1 cup unsalted Butter {room temp}
2 cups of vanilla sugar
2 large eggs
2 egg yolks
Pinch of salt
3 cups all purpose flour
1 teaspoon baking powder
1 cup of buttermilk
2 teaspoon of vanilla extract
1-1 inch piece of vanilla bean

INSTRUCTIONS:
Preheat oven to 350 E
Heat the buttermilk until it simmers
Remove from heat and add the vanilla pod
Set aside
Beat Butter and sugar on high until light and fluffy
Add egg yolks one at a time, beat
Blend flour
Cut open vanilla pod and clean it
Add vanilla to buttermilk
Add ⅓ of flour mixture
Add ½ the buttermilk
Continue to alternate the flour and buttermilk ending with flour
Scoop into cupcake papers {bake 18-20 min}
Cool and Frost desired buttercream

Carrot Cake with Brown Buttercream Cheese Frosting # 3

INGREDIENTS: 
1 pound carrots { grated}
3 large eggs
2 cups of sugar
11/2 cups of canola oil , ⅓ cup buttermilk , 11/2 tsp vanilla extract , 2 cups whole wheat flour
2 teaspoon baking soda / 1 tsp ground cloves
1 tsp coarse kosher salt / 1 tsp ground cinnamon
FROSTING
2 sticks of unsalted butter
16 oz cream cheese
1 tsp vanilla extract
3-4 cups of powdered sugar
¼ shredded coconut, toasted

INSTRUCTIONS:
Preheat oven to 350 °
Whisk flour, baking soda
Bake 30 to 40 minutes
Cook frosting { 5 min}
Cream together butter & cream
Add vanilla extract & salt
Add powdered sugar
Garnish
